Benedictine Breakfast: Transform Your Morning Spread

When thinking of breakfast spreads, egg and mayonnaise often come to mind initially. Yet, another lighter alternative is gaining popularity. This choice is ideal for spring and summer morning meals.

Egg salad is a classic, and you can’t dispute that when made properly, it’s truly delicious. It feels like a shame to stick with just one option for sandwiches when numerous other spreads are available. One of these alternatives is

Benedictine paste

This has become quite popular at my place. The preparation is easy and doesn’t take longer than ten minutes.

Benedictine spread – simple recipe

Upon reading the title, you might assume it’s one of those dishes favored by monks. However, nothing could be more inaccurate—the name actually originates from Jennie Carter Benedict, an American restaurant owner who lived around the transition between the 19th and 20th centuries. This recipe is attributed to her. At my place, we enhance it with some extra components.

Benedictine paste is a light mixture of cream cheese blended with a hint of green from cucumbers and the freshness from squeezed onion juice. I always include

chopped chives or dill

Add some zing and assertiveness with garlic to this spread. It’s ideal for layering on sandwiches, spreading over crackers, or rolling into wraps. Additionally, you can utilize it as a dip for veggie sticks or drizzle it over grilled meals.

Ingredients:

  • 225 grams of smooth cream cheese spread,
  • 2 pickling cucumbers,
  • half an onion,
  • dill or chives,
  • 1 small piece of garlic (optional)
  • salt to taste,
  • a dash of cayenne pepper.


Preparation method:

  1. Shred the cucumbers with a coarse grater and place them in a bowl.
  2. Use a fine grater to shred the onion, then press it through cheesecloth to remove the liquid, and mix this with the cucumbers.
  3. Include the creamed cheese and finely minced dill or chives in the mixing bowl along with the cucumbers. Modify the quantities according to your taste preferences.
  4. Include one crushed clove of garlic passed through a garlic press. Ensure it’s not too big, as you wouldn’t want it to overwhelm the flavor.
  5. Thoroughly combine all ingredients and adjust seasoning with salt and cayenne pepper as desired.
