Easy Benedictine Paste Recipe
The name might lead one to believe it’s a dish favored by monks, but nothing could be more inaccurate—its moniker actually pays homage to Jennie Carter Benedict, an American restaurant owner who lived during the transition between the 19th and 20th centuries. She is recognized for creating this recipe. At my place, we enhance it with some extra components.
Benedictine paste is a light mixture of smooth cream cheese blended with a hint of green from cucumbers and the liquid from strained onions. I typically include
chopped chives or dill
Add some zing and assertiveness with garlic to this spread. It’s ideal for layering onto sandwiches, spreading over crackers, or drizzling on tortillas. Additionally, you can employ it as a dip for veggie sticks or as a sauce for your barbecued meals.

Ingredients:
- 225 grams of smooth cream cheese spread,
- 2 pickling cucumbers,
- half an onion,
- dill or chives,
- 1 small piece of garlic (optional)
- salt to taste,
- a small dash of cayenne pepper.
Preparation method:
- Shred the cucumbers with a coarse grater and place them into a bowl.
- Use a fine grater to shred the onion, then press it through cheesecloth to remove the liquid, and mix this with the cucumbers.
- Include the creamed cheese and extremely finely diced dill or chives in the bowl with the cucumber slices. Modify the quantities based on your taste preferences.
- Include one crushed clove of garlic passed through a garlic press. Ensure it’s not too big, as you want to avoid overwhelming the flavor.
- Thoroughly combine all ingredients and then adjust the seasoning with salt and cayenne pepper as desired.
